WHere is a simplified version of a drink found on the seasonal menu. Designed as a batch pre-mixed that's packed with the flavours of a holiday season, which makes it ideal for your holiday party. Any leftover citrus syrup for breakfast cocktails, desserts, or to make additional servings of this cocktail.
The Bikini Cocktail
Makes enough for 10 guests
To make the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
Ingredients for the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine the listed components into a saucepan, heat until it reaches a gentle boil, agitating so the sugar melts. After that, take off the stove allowing it to cool entirely. Decant into an sterilised bottle, close it and store in the refrigerator, where it will keep for up to four weeks.
To make Batch Mix: Pour all the liquid ingredients into one large bottle, leave to sit for 60 minutes, then filter it , ideally through a fine cloth, to ensure it's completely strained.
For serving: Add 85ml from the batch mix into a cocktail shaker containing ice, and stir carefully for about 60 seconds to cool it down. Strain to a cold coupe glass or a similar vessel, top with a few cranberries and finish using a brief mist of mandarin oil over the drink.
